Easy Okonomiyaki Recipe

The coziest, low effort recipe. Simple prep, comfortingly delicious. And cute as hell!

Okonomiyaki is without a doubt my FAVOURITE dish of all time. I'll admit, I'm not the best at cooking, but this recipe NEVER fails me. It's the perfect low-effort, customisable, somewhat healthy meal perfect to impress your friends, family (or just yourself) 😉


The beauty about okonomiyaki is that it's super customisable. You can adapt this recipe to suit vegetarian needs by filling it with fillings of your choice and swapping dashi for vegetable stock, and mayo for vegan-friendly mayo!


I tend to keep my okonomiyaki simple with just mushrooms - but go ahead and fill yours with shrimp, bacon, veggies, cheese, kimchi, whatever you want!


okonomiyaki | recipe

Serves 2 to 3

Ready in 30 to 40 minutes


ingredients


Okonomiyaki Batter

  • 1 cup (200g) all purpose flour

  • ½ tsp salt

  • ¼ tsp baking powder

  • 4 eggs

  • ½ cup (120ml) dashi or chicken/veg stock

  • ½ large head cabbage, thinly sliced

  • 2 tbsp (30g) pickled ginger or fresh

  • 4 shiitake mushrooms, sliced

  • 1 oyster mushroom, sliced

  • 1 bunch thin sliced green onions

  • ½ cup breadcrumbs (optional)

  • Sprinkle of crispy shallots (optional)

  • Meat/seafood/cheese/veggies of your choice! (optional)

Okonomiyaki Sauce

  • 2 tbsp ketchup

  • 2 tbsp worcestershire sauce (or ½ tbsp oyster sauce and 1 tsp hoisin)

  • 1 tbsp honey

Toppings

  • Okonomiyaki sauce

  • Japanese mayo

  • Benito flakes

  • Spring onions

  • Seaweed


Preparation


  1. Mix flour, salt, and baking powder. Add eggs and dashi/stock and mix into batter.

  2. In another bowl, add thinly sliced cabbage, dash of salt, ginger, sliced mushrooms, spring onion, breadcrumbs, crispy shallots and any other fillings of your choice. Mix together.

  3. Pour cabbage mixture into the batter. Mix together. If the mixture is not binding, add more flour.

  4. Heat oil/cooking spray on medium heat. When hot, scoop half of the mixture into the pan and spread to fit the pan. Press down on the mixture to ensure it binds.

  5. Cook until bottom browns (5-10mins). When ready, slide the pancake off the pan onto a plate. Place the pan over the plate and flip the pancake into the pan.

  6. Brush the top with okonomiyaki sauce and let the bottom cook until browned. Will cook quicker than the first side.

  7. When finished, slide okonomiyaki off onto a plate. Brush okonomiyaki sauce on top and pipe mayo. Use knife to create signature okonomiyaki pattern.

  8. Add toppings, such as benito flakes, dried seaweed, spring onions, crispy shallots.

  9. Eat!
